Nourish Recipe: Kid’s Ice Pops

KID’S ICE POPS

Connect with your inner child - and/or your actual children - with my kids’ favorite ice pops! We love making and enjoying these on a hot summer day and we hope you do too!

This recipe is loaded with great health benefits including:

  • Fresh summer berries are loaded with antioxidants. 

  • Coconut milk and yogurt provide healthy fat and probiotics to support the belly. 

  • Raw honey is a wonderful immune boost. 

This is so much better than store-bought and so fun to make!

Makes: 6-8 Pops | Prep time: 10 mins | Cook time: 0 mins

Ingredients:

  • Approximately 3 cups organic strawberries or blueberries

  • 1.5 cups yogurt or 1 can full fat coconut milk (for dairy free)

  • 1/2 tablespoon vanilla extract

  • 3 tablespoons raw honey

Tools:

  • Blender or food processor

  • Popsicle molds

  • 2 cups

  • Mixing bowl

  • Freezer space

How to:

  1. Puree strawberries or blueberries in a blender or food processor. Add 1 tablespoon of honey to the blender and blend until combined. Set aside in a cup.

  2. In a separate bowl, mix coconut milk or yogurt, vanilla extract, and 2 tablespoons of raw honey. Mix until combined thoroughly and set aside in a cup.

  3. Pour 1-2 tablespoons of berry puree into each popsicle mold. Pour 1-2 tablespoons of coconut or yogurt mix into each mold. Continue to switch between the berry puree and the coconut mixture until popsicle molds are filled. 

  4. Place molds in the freezer. Allow popsicles to freeze completely before serving, about 5 hours. 

  5. Once your popsicles are ready to serve, run the bottom of the popsicle molds under warm water to help release them from the molds.

Serve and enjoy!
