Grain-Free Pancakes and Strawberry Maple Sauce

Serves: 4-6 | Prep time: 10 mins | Cook time: 10 mins
Ingredients:
Pancakes:
1 cup milk or milk substitute
1 t apple cider vinegar
3 whole eggs
3T almond butter
½ cup coconut flour
1 cup tapioca flour
1.5t vanilla extract
1t cinnamon
2T honey
½ t baking soda
pinch salt
ghee or coconut oil
Strawberry Maple Sauce:
8-10 strawberries, fresh or frozen (thawed)
2 teaspoon fresh lemon juice
2.5 tablespoons maple syrup
How to:
Prepare Grain-Free Pancakes:
Whisk together all ingredients except ghee or coconut oil.
Batter should be thick but pourable. If more liquid is needed, add more milk.
Over a medium heat, melt the ghee or coconut oil.
Ladle about 2 oz of batter into the med-hot pan.
Let it cook until the pancake is bubbling and a medium brown. Flip and repeat.
Serve with maple strawberry sauce and ghee.
Prepare Strawberry Maple Sauce:
Put all ingredients in a blender and puree.
Heat over a low flame until warm.
Serve and enjoy!
