Recipe: Roasted Dandelion “Coffee”

ROASTED DANDELION “COFFEE”

Dandelions have gotten a rough reputation. Truth is, they are not only amazing at aerating and mineralizing the soil, but they also have incredible health benefits for us! They are WAY more powerful than we may have been taught. Harness the power of dandelions with dandelion tea!

Serves: 4-6 | Prep/cook time: 2-3 hours | Simmer time: 20 mins

Ingredients:

  • Dandelion roots, harvested sustainably and separated from the leaves/stems (you can use the leaves for salads and keep the flowers for dandelion flower teas - all parts of dandelions are edible!)

  • Honey or sweetener of your choice (optional)

  • Milk or milk alternative of your choice (optional)

How to:

Preheat oven to 200.

1. Separate the roots from the leaves/stems and rinse well with cool water. Cut the fresh roots into smaller pieces.

2. Line a baking sheet with parchment paper and lay the chopped roots out evenly. Roast for 2-3 hours, rotating often. They’re done when you can easily snap them in half!

3. Bring a pot of water to boil and add the roasted dandelion root. Simmer for 20 minutes.

4. Strain the roots with a fine mesh strainer and serve the “coffee” hot! Add your favorite sweetener or milk.
