Apple Cider Roasted Fall Veggies

This is a great way to try new fall veggies and squashes. Squash is very beneficial for health - it is high in antioxidants and vitamin C, which are both great immune system boosters for this time of year. This recipe is also high in fiber, which makes for a high-functioning digestive system. 

Because of their natural sweetness, squash is a kid-friendly ingredient that serves them well!  

Serves: 4-6 | Prep time: 10 mins | Cook time: 40 mins

Ingredients:

  • About 1 lb. fall squash, peeled and sliced into 1-inch cubes. This can also include fall veggies such as fennel, carrots, mushrooms, golden beets, etc.

  • 1 Tbs. coconut oil or butter


  • 1 cup apple cider


  • 1 teas. apple cider vinegar

  • 1 Tbs. maple syrup

  • ¼ teaspoon cinnamon

  • ½ Tbs. chopped rosemary

  • Thyme (optional)

  • Salt and pepper to taste

How to:

  1. Melt coconut oil or butter in skillet with rosemary.

  2. After a few minutes, add the squash, salt, cider, maple syrup, cinnamon, and vinegar. You may need to add some additional cider (or water), enough to cover the squash.

  3. Bring to a boil and then cover on a slow simmer.

  4. Braise for 30 minutes or until tender.

  5. With a slotted spoon, remove veggies. At this point the juice should be reduced to a glaze. If not, raise heat for a few minutes until excess liquid evaporates. Add a splash of vinegar if you like at the end and drizzle over veggies.

    Serve warm and enjoy!
