Lemon Cashew Hemp Truffles

Makes: apx 16 truffles | Prep time: 10 mins | Freeze time: 1 hour
Ingredients:
2 cups cashews
1 Tablespoon lemon rind (you can grate the lemon skin on a hand grater, just getting the outer yellow layer. Save lemon for juice)
1/2 cup fresh lemon juice
2 Tablespoons hempseeds
¼ cup pure maple syrup
2 pinches of sea salt
¼ cup unsweetened shredded coconut
½ cup unsweetened shredded coconut for rolling
How to:
Add all ingredients except additional coconut for rolling into a blender or food processor and blend until mostly smooth.
Scoop a heaping tablespoon of batter and roll it between your hands into a ball.
Drop the rolled truffle into additional shredded coconut to coat.
Set each finished truffle on a small pan in 1 layer.
Chill for at least 1 hour to overnight.
Serve and enjoy!
Good for two weeks in the refrigerator, or freeze for up to a year and remove when needed - thaws in two hours.
