Protein Blondies

Nourish with our Protein Blondie recipe. This recipe is delicious and packed with plant-based protein to give you good energy through the day.

Serves: 6-9 | Prep time: 15 mins | Cook time: 25 mins

Ingredients:

  • 1 Tablespoon Coconut Oil (for greasing the pan)

  • 1 Can (15.5 oz ) Garbanzo Beans

  • ½ Cup Almond Butter or Sunflower Seed Butter

  • 1/3 Cup Maple Syrup

  • 2 Teaspoons Vanilla Extract

  • ½ Teaspoon Sea Salt

  • 2 Teaspoons Ground Flax Seed

  • ¼ Teaspoon Baking Powder

  • ¼ Teaspoon Baking Soda

  • 1/3 Cup Chocolate Chips + 1 Tablespoon for sprinkling on top

  • Coarse Sea Salt for sprinkling (optional)

How to:

  1. Preheat the oven to 350.

  2. Grease an 8x8 pan with coconut oil.

  3. In a food processor, add all of the ingredients except for the chocolate chips.

  4. With a spatula, scrape all of the blended ingredients into a bowl.

  5. Fold in 1/3 cup of the chocolate chips

  6. Pour all ingredients into an 8x8 baking pan. Sprinkle the remaining 1 Tablespoon chocolate chips on top.

  7. Put in oven and bake for approximately 25 minutes, pull out of the oven and sprinkle with course sea salt.

  8. Cool 15-20 minutes and cut into squares.

    Keeps for approximately 5 days in the refrigerator

    Serve and enjoy!
