Nourish Recipe: Grass-Fed Chili (Bean-Free)
Grass-Fed Chili (Bean Free)

Serves about 6 | Prep time: 20 mins | Simmer time: 45 mins
Ingredients:
1 small onion
2 # grass fed beef
4T chili powder
5 bell peppers (we like to use a variety of colors)
2 cloves garlic
1T cumin
4 cups chicken stock (we prefer housemade 24 hr)
3 1/2 cups canned diced tomato, drained
2 cups canned crushed tomato
Salt to taste
Cilantro leaves (optional)
Sour cream (optional)
Fresh lime (optional
How to:
Sauté onions with salt over medium heat until translucent; add beef and 1T chili powder and cook
until cooked through most of the way.
Add all the peppers and cook until softened, stirring occasionally.
Add chicken stock and reduce by half over high heat.
Add all canned tomatoes and the remaining chili powder and cumin.
Simmer for approximately 45 minutes. Check seasoning.
It is delicious topped with cilantro leaves, sour cream, and a fresh lime squeeze!
This is great as leftovers and keeps for about 5 days in the refrigerator. It freezes well.
