Decadent Grain-Free Beet Brownies

This is a delicious, yummy and gooey dessert in honor of our birthday month!

It is decadent and also has nutritious ingredients that your body will thank you for. This brownie is wonderful layered with ice cream or whipped cream and lots of summer berries.

The whole family is going to dig it!

Serves: 6 | Prep time: 10 mins | Cook time: 45 + 45 mins

Ingredients:

  • 2 medium beets (to make ½ cup beet puree)

  • 1 Tablespoon olive oil

  • 2 Tablespoons water or apple juice

  • 2 Tablespoons + 1 Tablespoon coconut oil for greasing the pan

  • 3/4 cup cacao powder

  • 1/2 cup almond meal

  • 1/2 cup almond butter

  • 1/3 cup honey

  • 1/4 cup high-quality maple syrup

  • 1 Tablespoon vanilla extract

  • 1 teaspoon baking powder

  • Pinch of sea salt

How to:

  1. Heat oven to 375*

  2. Cut a sliver on both ends of the beets to remove the root and the stem, then scrub the beets to remove any dirt.

  3. Put the beets in a small pan (about 8x8) and add 1 cup of water and a drizzle of olive oil. Cover with a piece of foil.

  4. Cook the beets for about 45 minutes until they are pierced easily with a sharp knife.

  5. Lower oven temperature to 325*.

  6. Let beets cool, then remove the skins with a paper towel or hand towel.  It should come off easily.

  7. Rough chop the beets and put them in a food processor with just a bit of water or apple juice (about 2 Tablespoons) to make a puree.  Measure out ½ cup of beet puree for the brownies.

  8. Melt 2 Tablespoons of coconut oil.

  9. Mix together all ingredients including the beets and the melted coconut oil in a bowl with a spoon. Mix well until everything is fully incorporated.

  10. Grease an 8x8 pan with the remaining 1 Tablespoon of coconut oil.

  11. Pour the brownie mixture into the pan and bake uncovered at 325* for about 45 minutes. 

  12. To check for doneness, insert a sharp knife or toothpick into the center.  It should come out mostly clean.

  13. Let cool for 20 minutes and enjoy! This stays fresh for about 5 days in the fridge.
