Recipe: Fresh Stinging Nettle and Yam Soup

FRESH STINGING NETTLE AND YAM SOUP

Deeply nourishing nettles grow wildly in the summertime around Colorado. If you are lucky enough to have a patch of nettle nearby, forage them for a healing activation! Nettles calm inflammation in the body by balancing the immune response and are high in antihistamine properties which is powerfully healing for seasonal allergies.

Serves: 4 | Prep time: 5 mins | Cook time: 60 mins

Ingredients:

  • 8 cups chicken or veggie broth

  • 1 onion, chopped

  • 1 Japanese yam, chopped (I much prefer this to a regular sweet potato for this recipe)

  • 1 small bunch of chard or kale, chopped

  • Lots of nettle - about 4 handfuls after it destemmed. (Use gloves to pick and destem or you will get stung!)

  • Salt to taste

How to:

1. Bring all ingredients except nettle to a boil, then reduce to a simmer for about an hour.

2. Add nettle for the last 15 minutes of the simmering time.

3. Blend all ingredients completely with a hand blender or in a blender.

4. We love to garnish each serving with a drizzle of truffle oil but it is wonderful either way. Serve hot.
