Recipe: Beet Hummus

BEET HUMMUS

Our beet hummus was a favorite at our restaurants! Enjoy it at home as a dip or on sandwiches.

Makes: 2.5 Cups | Prep time: 10 mins | Cook time: 45 mins

Ingredients:

  • 5 medium beets, scrubbed

  • 2 Tbsp olive oil

  • 1/4 cup water

  • 1/4 cup tahini paste

  • 1/4 cup lemon juice

  • 1-2 small garlic cloves

  • 1 tsp sea salt (or to taste)

How to:

Preheat oven to 375ºF

1. Place whole, cleaned beets in a baking pan and drizzle with olive. Pour water around the beets and cover with foil.

2. Cook until the beets are easily pierced through with a fork, approximately 45 minutes.

3. When beets are pierced easily with a fork, remove from the oven.

4. When cooled enough to handle, rub skins off with a cloth or paper towel. (if skins are not coming off easily, take a you can peel it with a knife!)

5. Chop beets and put in a food processor.

6. Add tahini, lemon juice, garlic, and salt. Blend well.

7. Chill then serve!
