Cashew Cream Broccoli Mac and Cheese

Nourish with our hidden veggie, dairy-free, DELICIOUS mac and cheese! Kids and adults love this recipe - we like to add additional sautéed broccoli on top and/or ground grass-fed beef or buffalo. Get creative and make a meal!
Serves: 4-8 | Prep time: 15 mins | Cook time: 25 mins
Ingredients:
12-16 oz Gluten-free pasta, cooked
1⁄2 Head broccoli, chopped small
1 Tbsp Olive oil or coconut oil
1⁄2 Onion (about 3⁄4 Cup)
1 and 3⁄4 Cups raw cashews
1 Can coconut milk
1⁄2 tsp dark mustard
2 tsp sea salt, to taste
3⁄4 Cup nutritional yeast
1 tsp Apple Cider Vinegar
1 tsp Garlic powder
1⁄2 Cup water
How to:
Sautee the diced onion in a medium pot until it is soft and translucent.
Add cashews, water, coconut milk, and broccoli to the pot and bring it to a boil then simmer for 5-7 minutes.
Add the cashew mixture to the blender along with nutritional yeast, mustard, apple cider vinegar, garlic powder, and salt.
Blend until smooth and toss with the pasta.
We like to add additional sautéed broccoli on top and/or ground grass fed beef or buffalo. Get creative and make a meal!
Serve and enjoy!
This recipe makes enough cashew cream for 2 boxes of pasta. It freezes well and can be defrosted overnight and warmed over a low heat.
The cashew cream lasts for 5 days in the refrigerator.
